New energy-efficient Open Pot Gas Fryers from Imperial combine a number of features to increase oil life and save time and energy.

The burners heat ceramic plates outside the fry pot, directing infra-red heat to the sides of the pot and heating the oil rapidly.

The snap-acting thermostat has a temperature range of 93°C to 204°C, which helps extend oil life and produce uniformly-cooked foods. The deep cold zone prolongs the useful life of the oil further by preventing the carbonisation of captured food particles.

The fryers, which offer oil capacities from 22 litres to 41 litres, allow easy access to the frying area and the cold zone for cleaning.

Imperial says its Speed Tube Gas Fryers provide improved fuel efficiency and quicker heat-up and that there is no need for fry pot insulation.

Tubes armed with heat deflectors run beneath the oil level to provide a high BTU output and fast temperature recovery, which means food can be fried more quickly.

They are available in manual, solid-state or computer-controlled versions. Imperial's Side Car Fryer/Filter system adds an oil filtration unit, stainless-steel dump station and food warmer to the fryers.
