What's New? - Ethnic Sauces

Out of the blue
Blue Dragon offers cooking sauces from around the world containing authentic fragrances, flavours and spices, which have been adapted to suit British palates.

What's more, they are a quick and easy way to make authentic ethnic cuisine.

For Chinese cuisine, Blue Dragon has added Chow Mein and Black Pepper Sauce to the range, which work well with red and white meats. The sauces are in 1.1 litre plastic jars, are sufficient for 20 portions and include recipe suggestions.

Black Bean Sauce is available in a larger 2.2 litre container.

Tabletop and dipping sauces such as Soya and Hot Chilli Sauce are in 2 litre plastic bottles, while Satay Sauce is in a 2.2 litre size.

For Thai cuisine, Chilli Dipping Sauce can be used in many ways. For example, it can be mixed into mashed potatoes, to enhance dishes, as an ingredient in a stir fry or as a dip with Rice Crackers, spring rolls or chicken wings. Available in 1 litre containers. Recent additions include Thai Green Curry Sauce (1.1 litre) and Thai Red Curry Sauce (1.1 litre).

For Japanese dishes, products include Teriyaki Sauce, made from soy sauce and mirin. It can be used for glazing anything from chicken, chops and ribs to more delicate options such as dish and shellfish.

Or it can be used as a marinade a couple of hours before cooking, depending on the level of flavour required.

According to recent figures, Thai cuisine is set to grow a further 80 per cent over the next four years.

To capitalise on this buoyant market, Masterfoods has launched Uncle Ben's Thai Green Curry culinary sauce with ginger, garlic and lime leaves. It can be used as a dip, stir fry, pour over, marinade or brush on sauce.

A new free recipe card is available showing five dishes including Thai Green Prawn Curry. Available in packs of 2 x 2.3kg PET containers.

Also new are three new sauces in The Americas range, under the Uncle Ben's label. They are: Hickory Smoke Barbecue, Sweet Honey Barbecue and Fajita sauce. The company has also created a new recipe for Chilli Con Carne.

Spice world
Spice up your menu with the range of Tilda's Oriental and Indian sauces. They can be used straight from the jar for main courses or as a dip, starter or snack or as an accompaniment to a tossed salad or jacket potato.

The Oriental range includes Thai Red Curry, Thai Green Curry and Sweet & Sour Sauce.

The Indian range contains six varieties from a mild Korma Sauce through to a hot Madras.

Recipe ideas are available such as Lamb Rogan Josh with Roasted Tomatoes, Grilled Fish Tikka Masala Style and Three Bean Vegetable Curry.
