Three way oven options
Deck, conveyor or wood-burning: Bakers Pride Europe aims to offer a full range of options under the Middleby Marshall and Wood Stone brands and also sells its own Bakers Pride deck ovens, which are available in a range of four widths. These can be stacked flush up to three high for maximum production from minimum footprint space. Features include prestressed spring-loaded doors, a deep heat sink and 4-inch thick insulation all-round. Countertop electric models range in price from £1,365 to £3650 with gas stone deck ovens from £3885.
Middleby Marshall conveyor ovens come in gas or electric versions with new "impingement plus" facilities ensuring consistent results by forcing columns of hot air onto the food via perforated "fingers" along the conveyor belt. A choice of 20, 24 , 32 and 40 inch belt widths are available plus split widths.
For a more theatrical front-of-house form of baking, Wood Stone ovens provide a domed ceramic chamber with wood-burning and/or gas fired cooking of pizzas on the circular hearth. Diameters range from 4 ft to 7 ft providing capacity for up to 480 x ten inch pizzas per hour. Rectangular gas fired "Fire Deck" models are also available in 9, 15 and 42 sq ft versions, each with extra wide ceramic toughened glass doors clearly displaying the" flickering flames" effect. Latest Wood Stone oven is the ceramic hearth Bistro with 7 sq ft usable cooking space.

Fold-over grilling
Serving pizza can be a headache for small kitchens but the Ital tabletop contact grill employs a patented concept with stone base and fold-over lid to cook pizzas up to 12 inches diameter from frozen in 4-5 minutes. Latest dual version, the G3/900, doubles up the capacity of the original single version with two separate grills. Both models work on standard 13 amps supply. Prices: dual version: £395; single: £195.
Also new from Ital is an electric salamander suited to pizzas, toasted sandwiches and similar items. It features a chrome plated grille, variable height top grill and two independent cooking areas. Total sizes is 600mm wide x 505mm deep x 510mm high and price is £995.

Infra-red quartz elements and stone hearth are paired in the PZ330 pizza oven from Roller Grill. Single ovens are available at £479 each and twin ovens at £745, each stackable two high for maximum space usage. A 12 inch pizza, fresh or frozen, can be baked off in just over four minutes and the oven can be used for other tasks such as pies, lasagne and Quiche.
There is also the option of a tray-loaded single oven without stone base for reheating or cooking pizzas up to 16 inches diameter and priced at £425.

Lincoln Impinger conveyor ovens, now being distributed in the UK through Enodis, include models with a twin belt configuration, making it possible to handle a greater range of products at rates two or three times faster than a single belt oven.
A patented design allows the stainless steel conveyor and the air fingers to be removed from the front of the oven for cleaning, saving time and making it possible to site the oven in a more compact space.
Like other Impingers, ovens have the the established system of hot air blown onto the pizzas, top and bottom, via perforated chambers. Each belt is independently controlled and load compensating, readily accommodating, for example, high margin food products requiring different bake times.
