Albert Roux opens first restaurant in Scotland

Silver Catey winner Albert Roux has opened his first restaurant in Scotland.

The iconic French chef signed a deal with luxury hotel Rocpool Reserve last December to take over the food and beverage operation at the five-star hotel in Inverness.

His remit at the property includes breakfast and room service as well as the new restaurant Chez Roux.

The 50-seat brasserie offers a classic French menu similar to that of the chef’s recently established Brasserie Roux concept.

Roux has been training the hotel’s chefs over the past three months, with executive chef Davey Aspin now in charge of the restaurant.

Kerry Watson, general manager of Rocpool Reserve, said: “The food Chez Roux offers will have a broad appeal for all kinds of diners and guests.

“As well as the more traditional evening meals, we are introducing the RouXpress lunch menu which will deliver four courses in 40 minutes for the set price of £12.95.”

The deal with Rocpool Reserve is the third contract Roux has entered with a luxury hotel this year after the Ellington in Leeds and Sofitel at London Heathrow’s T5.

The luxury Ellington hotel in Leeds, which entered administration last month, was last week closed and put up for sale for a guide price of £3m.
