Coppenrath & Wiese has launched a vast array of desserts under the Profi-Line label. These include Traybakes, consisting of a tray of 24 portions already cut into generous portions. There are six varieties such as Plum Crumble, Honey and Almond and Poppyseed Quark Traybake. The trade price is 20p per slice.
Also on offer is an array of frozen tortes, which are ready to serve after defrosting for an hour and a half. They are not pre-portioned but are easily cut into 16 portions. Varieties include Raspberry Mascarpone Torte, Black Forest Gateau and Sparkling Wine & Cassis Torte. The tortes measure 28cm diameter. Other products include Cream Rolls, Danish pastries and white and wholemeal rolls and baguettes.

Mousse trap for choc lovers
Nestlé FoodServices has introduced two new dessert mousse ranges. These include three dehydrated mousses in milk, dark and white chocolate that require the minimum of preparation. Simply add the mix to milk or water, whisk, pour into individual cups and chill for two hours. The result is a rich mousse with a creamy, smooth texture.
Alternatively, the mousses can be used as an ingredient in more complex desserts. The milk and white chocolate mousses are supplied with additional confectionery pieces that can be incorporated or used as a topping.
Or there's Chocolate Mousse in a tetra pak. All you do is cut the top off the carton and pour the mix out and then whisk quickly to create a rich chocolate mousse. The white and dark chocolate mousses are available in 1.1kg packs. When added to two litres of milk, they make approximately 70 x 100ml portions. The milk chocolate mousse is in a 1.5kg pack which, when added to three litres of milk, produces 100 x 100ml portions.
The Tetra Pak mousse is available in convenient 1 litre packs and makes about 18 x 110ml portions. Other desserts from Nestlé FoodServices include Smarties Mousse, a chocolate mousse with Mini Smarties toppings, Crunch Mousse, a chocolate mousse with Crunch crisp cereal pieces coated in milk chocolate, and Cappuccino Mousse with chocolate cappuccino flavoured pieces.
Nestlé FoodServices has launched a range of sauce toppings available in three varieties - Caramel, Chocolate and Red Fruits.The sauces are versatile and can be used to decorate desserts as well as the finished plate or used as toppings on ice cream sundaes, pancakes and waffles. In particular, the caramel sauce is ideal for Crème Caramel desserts, while the chocolate sauce can be used as a fondue.
The sauces are packaged in squeezy bottles, which has a new clear stripe band to indicate how much sauce is left. Available in 1kg catering size packs with 6 bottles to a case, and have a long shelf life of 12-18 months.

Margetts sauces and pie fillings from Kerry Foodservice can be used to create an array of desserts. For example, Chocolate Brownie smothered in Margetts Chocolate Fudge Sauce or layered Cherry Scotch Pancakes using Margetts Cherry pie filling with a contracting Margetts Butterscotch sauce.
