Staub white cocotteFrench cast-iron cocotte manufacturer Staub has added white to its range of colours for use in fine-dining restaurants, brasseries and gastropubs where the cocottes can be brought directly from the oven to the table.

The cocotte's external enamel coating is hard-wearing and easy to clean while its smooth underside is suitable for use on fragile surfaces such as ceramic hobs. Inside there is a matt black enamel coating and condensation accumulated on the small dimples on the underside of the lids ensures that food is continuously basted.

Cast iron's high conductivity means that heat is evenly distributed throughout the cocotte and doesn't just cook the food closest to the bottom; food simmers as if in an oven, receiving heat from all sides even on a stove.

Staub cocottes come in round and oval shapes and diameters range from 10cm to 30cm (round) and 11cm to 41cm (oval). List prices begin at £41 for round cocottes and £45 for oval cocottes.
