Ethnic food offers you an unrivalled opportunity to add interesting and tasty dishes to your repetoire knowing that you will be pleasing the punters who are buying into this sector as never before. Jackie Mitchell reports

Nuts for a real sauce
Saté sauce from Unifine Dohler is the latest addition to the company's Wyko range of ready to serve culinary sauces.

This ambient peanut-based satay sauce can be served hot or cold quickly and easily. It can be used in red or white meat and game dishes, as well as chicken and fish specialities.  It can also be used as a topping for jacket potatoes, pasta, salads and sandwich fillings.

Other sauces in the range include Ginger Chutney, Thai, Garlic and Proven‡al, as well as Mole Poblano, the savoury sauce with a hint of chocolate from South America.

All sauces from the range, including satay, are available in 2.5 or 3 kilo re-sealable buckets. 

Also from Unifine Dohler are Wyko Liquid Fond and Liquid Roux - an instant solution for stocks, soups, sauces, marinades and meals requiring a B‚chamel or Demi-glace finish.  Neither base contains GM ingredients or MSG and all varieties are low in salt and fat.

Both are sold in plastic bottles, with sufficient base for 25 litres of basic sauce.

Other products in the Unifine Dohler portfolio include herbs, spices, seasonings, marinades and dressings, as well as toppings, fruit fillings, flour-based mixes and chocolate.

The heat is on
What is a poonah? It's a new hot sandwich from Poonah Foods.

The Poonah comprises a large Indian style bread, folded over a choice of fillings in a brand new medium spiced Poonah sauce, which is a fusion of modern Indian and popular Western flavours.

All three products are supplied frozen and are available in a film that controls moisture loss during cooking. Each Poonah weighs approximately 300g and can be served as either a plated meal or as a large, hand held sandwich.

There's no need to mess around with blocks or powdered coconut or tins of coconut milk. All you have to do is open the pack of Chef's Taste Coconut Cream and pour.

The product from Pritchitts can be used for all types of ethnic cuisine including Thai dishes.

Just for pork
Pathfinder Foods has launched two new lean pork Sizzle Steak Oriental recipes - Lime & Coconut and Red Thai. These are pork loin steaks, which have been marinated in exotic herbs and spices and deep frozen. They can be cooked from frozen or defrosted and can be used quickly and easily.

For example pan fry the lime and coconut steak in butter or olive oil for about three minutes each side. Add a little water or wine to deglaze the pan and finish with cream. Serve with broccoli, buttered carrots and saut‚ potatoes.

The steaks can also be cut into strips and used for stir frying, sizzle platters, salads and sandwiches. Available 28 to a box.

Go Thai!
In 2001, the retail Thai market was worth £67 million, up 131 per cent from £29 million in 1996 and it is predicted to grow a further 80 per cent over the next four years.

To meet the demand, Masterfoods has launched "Go Thai", a new CD under the Uncle Ben's label, with ten exciting Thai recipes (starters, side plates and mains) as well as useful advice on theming events.

The CD is designed for use in conjunction with Uncle Ben's Thai Green and Sweet Thai Chilli culinary sauces, as well as Uncle Ben's frozen speciality rices.

Over 35 Thai restaurants in the UK have been awarded Thailand's Brand Logo - a certified mark, which guarantees the quality of service and cuisine that they offer. Awarded by the Department of Export Promotion, Ministry of Commerce from the Royal Thai Government, the brand conveys to customers that these restaurants will serve truly authentic Thai cuisine. To receive the Award of Excellence, which is valid for three years, Thai restaurants must pass a strict selection process.

Spice it up
Chicken Tikka Style Bites from Padley's give an ethnic twist on a multitude of dishes. As a starter, serve with a yoghurt and mint dip and a salad garnish; as a main, serve with Tikka Masala sauce, pilau rice, naan bread and traditional Indian accompaniments. Or as a snack, place in pitta breads and top with garlic sauce.
