Seasonal Swaledale lamb from Udale

Swaledale lamb rackFrom June to mid-September, Udale Speciality Foods Morecambe will be able to offer Suckling Swaledale Lamb, a light hill lamb reared on the Cumbrian fells on a near-organic diet of milk, grass and heather.

This diet not only yields a light, delicately textured meat with a milky taste similar to Pyrenean lamb but, according to research by the University of Bristol, much higher levels of the omega-6 and omega-3 essential fatty acids than in lowland lambs.

The animals are individually traceable to the farm-assured fell farmers, who are also involved in environmental schemes in Cumbria.

The lamb is sold as a whole carcass with a wholesale price of about £69.50.
