Paradise prawns from Direct Seafoods

The rare Paradise prawn from the South Pacific has been introduced to the UK by Direct Seafoods, the national UK network of regional fish suppliers to the premium catering trade, in concert with French food development company SOPAC.

The 100% traceable prawn is bred without the use of antibiotics, pesticides or additives on the island of New Caledonia in a protected environment surrounded by the world’s largest lagoon.

The Paradise prawn - which has already been taken up by Scott’s restaurant in London - is said to provide tender but firm flesh with a sweet flavour and a subtle rose tint. They’re sold in 1kg and 6kg boxes and are available in four sizes - 21/30, 31/40, 41/50 and 1/60 IQF. Prices start at £8.75.
