Ethnic summer trio from Brakes

China, India and Morocco are the inspiration for a trio of summer ethnic dishes from Brakes.

Shredded Aromatic Duck (sold in 2 x 500g packs) has been full-roasted with the skin on and will grill in three to four minutes.

Biryani Rice Salad, available in 2kg packs, combines wild, red and turmeric rice with Puy lentils and vegetables that have been tossed in a hot and sour curry dressing.

The third newcomer is Vegetable Tagine, a mix of roasted red and yellow peppers, butternut squash, courgettes, red onion and chickpeas in a sweet and spicy tomato sauce. It’s sold in cases of 12 x 400g pouches that can be heated in a microwave or simmered in water.
