London restaurant and cocktail bar Zebrano at the Establishment is launching a pay-as-much-as-you-like scheme for diners.
The Soho restaurant is introducing a new tapas menu on 9 July and every Wednesday will forgo producing a bill asking diners instead to pay what they think their meal was worth.
Owner Don Cameron told Caterersearch he was confident the scheme would work.
“We have a lot of regular customers and I’m confident that people won’t take advantage,” he said. “If the food tastes good and looks good, I’m convinced they’ll be happy to pay what it’s worth.”
Cameron added that if successful, he would extend the scheme to run from Monday to Wednesday.
“There’s so much doom and gloom around at the moment that giving people value for money is the key difference,” he said.
Leeds restaurant Room launched a similar scheme in May and for two months diners could choose how much they wanted to pay for a main course.
