PASTICHE Bistro, which operates three restaurants in Stafford, Stoke-on-Trent and Lichfield, launched a franchise package at this year's show. Its formula, originated in 1997, is designed to maintain plenty of repeat business with three-course lunches from £5 and three-course dinners from £10, with a monthly changing modern European menu created by founder John Ashmore and director-chef Brian Woods.

Estimated total start-up expenditure for a Pastiche franchise is around £80,000 dependent on location and premises, with a total liquid capital requirement of around £25,000. The company says that franchisees do not have to come from the catering sector but a serious interest in food is essential.
