National Chip Week is an annual event which this year runs from 15 to 21 February and aims to highlight the taste, variety and popularity of chips in addition to helping increase sales for the entire supply chain.

"It's easy to take part," says Caroline Evans, the Potato Council's head of marketing and corporate affairs. "Whether it's a simple notice on blackboards, a dedicated chip menu from which customers can pick their perfect portion or a complete chip-themed celebration including competitions and promotions, the week is a fantastic platform to boost customer interest and sales. The campaign is also supported by a nationwide PR programme, generating widespread coverage and awareness."

Ahead of National Chip Week, the Potato Council is also highlighting the importance of chip quality. Evans says: "As a nation of chip lovers, we would urge chefs to think about their sourcing policy - buy quality potatoes, fit for the purpose and store and handle them correctly, as this will make a difference to the resulting chip."

Maris Piper and King Edwards are excellent potatoes for chipping but there are many other varieties that produce a tasty chip too, such as Santé. Floury varieties have a high starch and low water content, which means they absorb liquid and flavour and break up easily when cooking. This makes them perfect for producing chips with a crisp outer shell and light, fluffy inside. And there are many prepared chip products available too.
