Garlic scapes from The Really Garlicky Company

Garlic scapes, the edible curly tops of the garlic plant, are in season and available from the Really Garlicky Company until about mid-August. The company says they have a mild garlicky flavour and can be served as a steamed vegetable or used in sauces, stir-fries or as a garnish.

The scapes come from Porcelain Hardneck garlic grown in Scotland, and the company is currently harvesting the green garlic cloves, also available until mid-August. The variety is closely related to wild garlic, with big, juicy cloves, easy-to-peel skin and a sweet, smooth flavour. The company says the Scottish garlic has no bitter aftertaste and has, on average, six to eight cloves rather than lots of little cloves.
