Michelin gives three stars to shark fin restaurant in Hong Kong

Michelin has awarded three stars to a Hong Kong restaurant specialising in the controversial delicacy of shark fin soup.

The famous French restaurant guide has made Chinese restaurant Sun Tung Lok the third restaurant in Hong Kong to hold three stars, joining Caprice and Lung King Heen at the city's Four Seasons Hotel.

The restaurant serves the traditional Chinese dish of shark fin soup, which according to environmentalists contributes towards the near extinction of some shark species as it involves the killing of millions of sharks each year. However, Michelin stressed that it wasn't endorsing shark's fin consumption and was recognising Cantonese cuisine.

The third Michelin guide to Hong Kong and Macau offers a total selection of four three stars restaurants (three in Hong Kong and one in Macau), 12 two stars (nine in Hong Kong and three in Macau) and 53 one star establishments (48 in Hong Kong and five in Macau).

The guide has awarded 14 establishments in Hong Kong and Macau with new stars including six restaurants being promoted to two stars. They are: Celebrity Cuisine and Cuisine Cuisine at the Mira; Italian eatery 8½ Otto e Mezzo; and French celebrity chef Pierre Gagnaire's restaurant Pierre in Hong Kong; as well as The Eight and Tim's Kitchen in Macau.

The 2011 Michelin guide to Hong Kong and Macau will be published in English and Chinese and is released today (2 December) in China and will be on sale from early February in Europe.

Michelin now publishes 26 guides covering 23 countries in Europe, the USA and Asia. Earlier this month, Tokyo retained its crown as the world's most Michelin-starred city, eclipsing Paris as the city with the most three-starred restaurants in the world.
