Silvano Giraldin, who recently retired after 37 years managing front-of-house at Le Gavroche, has become non-executive director at the public relations company that represents the Michelin-starred London restaurant.

Giraldin, who retired from full time employment at Le Gavroche in July but remains a director of the restaurant, has, in a somewhat unexpected move, joined the board of Redleaf Communications

“The team at Redleaf worked with me for the last 10 years at Le Gavroche and they feel like part of my business family,” he said. “The invitation to help guide their future success was one which I just could not resist.”

As well as his directorship at Le Gavroche, Giraldin sits on the management board of the Academy of Culinary Arts and is senior consultant to the Albert Roux Consultancy. As part of this role, he is responsible for reviewing a wide range of activities across the Roux portfolio including all wine lists, front of house, and staff training.

Emma Kane, founder and chief executive of Redleaf, said she was “truly delighted” that Giraldin was joining the company.

“He’s one of the most accomplished and assured managers of people that I have ever had the pleasure of working with,” she said. “His passion for people businesses and the huge skills he has amassed over the last 40 years will be invaluable to us in the continuing development of our team.”

Foraging – why all the attention?

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
