A new factory was built to produce the new Evolution undercounter dish- and glasswashers from Maidaid, which reduce running costs by 30% compared with models that are more than four years old, according to the manufacturer.

They cut rinse consumption to 2.3 litres per cycle, compared with the industry standard of 3.0 litres. The smaller wash tank (15 litres, against the standard 33 litres) can save up to 28 litres of hot rinse water per 24 hours for caterers who run their machines 40 times a day. The smaller tank also reduces detergent use by 56%, or 35 litres a day.

A patented new water filtration system improves wash quality by forcing soiled water to the bottom so it does not mix with clean water coming in, while a patented drain system siphons off the dirty water. This reduces chemical consumption and leaves cleaner water in the tank.

The new wash pump is less powerful but more efficient than previous versions, using a direct feed to the upper and lower wash arms in place of the more conventional power-sapping T-joint that splits the flow.

The double-skinned construction, electronic controls and quieter wash pump keeps noise levels down to 59 decibels.
