Charles Tjessem, the Norwegian chef from oil firm Statoil in Stavanger, won the €20,000 (£13,140) top prize in the Bocuse d'Or last week in Lyons, France. Tjessem beat France's Franck Putelat by one point; Germany's Claud Weitbrecht was third. Britain's Eyck Zimmer of London's Claridge's came eighth out of 23 competitors.
Founded in 1987 by chef Paul Bocuse, the competition is held in Lyons every two years. Candidates have five hours to produce two dishes with three garnishes using Norwegian fjord trout and beef fillets and oxtails.
* Customers of London chef Christian Sandefelt's Aquarium restaurant can now donate £1 of their bill to the World Wildlife Fund's marine conservation project. Sandefelt launched the scheme to help tackle depletion of fish species due to over-fishing.
