My favourite... ingredient

Coriander leaf

My favourite ingredient is the coriander leaf. It is a fantastic herb that improves the taste of almost every dish. I use it a lot for chutneys or simply as a garnish, either chopped or as a sprig. It also works perfectly in curries as a finishing herb. It's great, as it can be grown absolutely anywhere, be it in a garden or at home on your windowsill, with a bit of sun and compost.
