By August 2006, there were in excess of 1,114 budget hotels in the UK with a total of more than 76,478 bedrooms. The market remains dominated by two major brands - Premier Travel Inn and Travelodge. Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
