New bar and restaurant group launches with the acquisition of the Ebury

The Ebury, near London Victoria, has been acquired by a new operator, who is set to reopen the site early next year.

Darwin & Wallace has taken over the bar and restaurant from Tom Etridge and will reopen it following an extensive refurbishment.

The Ebury is the first outlet for the new group, headed up by former All Bar One brand manager Melanie Marriott, which plans to open more sites in affluent London areas, including Chiswick, Chelsea, Knightsbridge, Hampstead and Notting Hill. Darwin & Wallace is backed by the Imbiba Partnership, which also backs London bar group Drake & Morgan.

Following a redesign by Fusion DNA, who also developed the Drift in the City, the Ebury will reopen as an all-day casual bar and restaurant serving a menu of brasserie classics alongside a breakfast and weekend brunch offer. Average spend will be around £30, with Darwin & Wallace estimating that food will account for about 40% of sales.

Marriott commented: "We are delighted to have found the perfect opportunity with the Ebury site to launch Darwin & Wallace. The property is in a wonderful neighbourhood location and will be a strong setting from which to launch our new creation.

"The space will aim to appeal throughout the day and into the evening, to both locals and a wider audience alike. We are really looking forward to commencing the works on the property in anticipation of launching early in 2013."
