Michelin-starred chef Richard Corrigan has opened his latest Bentley’s Oyster Bar & Grill restaurant in his native Ireland.

The 75-cover restaurant in Dublin features Irish oysters, shellfish bisque with brandy, steamed fillets of Dover sole with crab and apple and Bentley’s signature fish pie with lobster, scallop, haddock and prawns.

The restaurant also boasts an exclusive wine and Champagne list which has been chosen to complement the menu, and features many small growers.

It will be managed by Drew Flood who previously worked as director of hotel services at the K-Club, where he worked for 17 years.

As well as Bentley’s restaurant the development also features a 100-seat Aviator Lounge, a private dining room for up to 60 people and 10 bedrooms.

Corrigan was previously head chef at Stephen Bull’s Blandford Street restaurant, which he followed with stints at Mulligan’s in Mayfair  and then Bentley’s Seafood Bar & Grill.

He gained his first Michelin star at Fulham Road restaurant in 1994 before moving to Lindsay House in 1997 where he gained his second Michelin star within one year there in 1998.

He bought Bentley’s in Mayfair in 2005 and also owns the Michelin-starred Lindsay House in Soho.
