Simon Young, executive chef at the Jumeirah Carlton Tower hotel, is hoping to raise £100,000 for the Children's Liver Disease Foundation by gathering 37 top UK chefs to cook at the third Celebrity Chef Gala dinner.
Michael Caines, executive chef at Gidleigh Park chef-patron of Lindsay House Richard Corrigan Paul Gayler, executive chef of the Lanesborough hotel and TV chef and presenter James Martin have designed a course each for the dinner.
The Dorchester's executive chef Henry Brosi Anton Edelmann, principal chef of Sodexho's executive dining arm Directors Table Buckingham Palace chef Mark Flanagan and John Williams, executive chef at the Ritz, will also attend.
The dinner, for 350 corporate and City guests, will be held on 22 March at the Jumeirah Carlton Tower.
The menu will consist of terrine of foie gras, Madeira jelly with truffle dressing butter-poached Scottish lobster, prawn and leek mousse, caviar vinaigrette roasted Denham Estate venison with two celeries, beetroot jus, "cacao anise" and baked ginger parkin with roasted rhubarb and rhubarb ripple ice-cream.
• Colin DB Tutt, who worked in hospitality for 35 years before he died recently, left £100,000 to Hospitality Action, Penny Moore, chief executive at the charity, revealed this week. His only request was that his motives be publicised to inspire others, Moore said.
