Gleneagles hotel is to add a new £2.8m destination Mediterranean restaurant this summer, Caterer has learnt.

The 267-seat, new-build eaterie will be based on a food market concept and will feature cooking stations, a long bar, a food emporium and food table built around a La Cornue cookery range.

A variety of seating options will be available, from high grazing tables and banquettes to an adult zone, while dining options will range from an antipasti buffet to table-served à la carte and a chefs table.

Braids will be turned into a coffee bar while the Strathearn will remain as the hotel’s formal dining room.

Food and beverage director, Alan Hill, said the new restaurant, which is due to open in July, was needed to cope with the demand from the Glenmor suites and hotel guests, which could reach more than 1,000 in occupancy on any given night.

He added: “This is the biggest single change in F&B since the hotel went from being a dreary old Victorian property to the resort we have become today. While there will be a Mediterranean theme we will continue to be environmentally aware and use our great local products.”

The project forms part of Gleneagles’ £18m investment this year which also includes developments to the spa and bedrooms on the hotel’s fourth floor.
