Dorstone goat's cheese

Dorstone goats' cheese, named after a Hereford village, is made by Charlie Westhead of Neal's Yard Creamery in Hereford. It's the latest in his range of goats' milk cheeses - chefs may already be familiar with Perroche and Ragstone - and the Fine Cheese Co describes it as being like an English Chabis. The round cheese is made from unpasteurised milk and vegetarian rennet, and is ashed around the outside. Inside it has a snowy white curd, an ice-cream texture and a very faint veining.
