Japanese restaurant Tsuru to launch new ramen concept called Tonkotsu

London sushi group Tsuru is to launch a new restaurant concept this summer focused on the Japanese noodle dish of ramen.

Tonkotsu, which will open on Dean Street in London's Soho in July, will be inspired by the ramen dens of Tokyo, serving a short menu of authentic ramen dishes - which typically consist of wheat noodles served in a meat- or fish-based broth.

Meaning pig bones and the name of a signature ramen dish, Tonkotsu will also serve a range of starters including gyoza (dumplings) and korokke (croquettes) as well as Japanese beers and whiskies.

Tsuru, which is co-owned by Emma Reynolds and partner Kensuke Yamada, currently operates three sushi restaurants at Bankside, St Paul and Bishopsgate, with a focus on sustainability.
