The newly refurbished restaurant at Dukes hotel in London is to be launched on 2 September as Thirty Six by Nigel Mendham.

Located at 36 Little St James Street and replacing the former Dining Room at the five-star, 90-bedroom hotel, the 36-seat restaurant will serve "modern British food with a classical twist".

Mendham, who was recently appointed to oversee the launch of the new restaurant, was previously head chef of the Samling in Ambleside, Cumbria, which holds one Michelin star.

"After five years of working in the Lake District, I feel ready to take on the challenge of a city," said Mendham, who intends to create Michelin star-quality food at Dukes.

Dishes he will be cooking will include: Goosenargh duck, savoury granola, black cherry and almond milk; roast quail, terrine forstiere, braised leg and quail jus; and taste of rhubarb crumble, ginger custard and ice cream.

The newly designed interiors from Shaun Clarkson in classic tones of black, gold and orange intend to reflect the modern, traditional theme of Mendham's food. Clarkson was previously responsible for the design of 11-new suites and the Perrier-Jouët Lounge, which opened at the hotel in April.

Dukes general manager Debrah Dhugga said the hotel was excited about the launch of the new restaurant. "As a destination restaurant, Thirty Six by Nigel Mendham will offer a fantastic location within the heart of the West End and the PJ Lounge next door will be the perfect place to start the evening with a Champagne aperitif or cocktail," she said.
