Marcus Wareing delays the opening of Gilbert Scott restaurant

Marcus Wareing has delayed the opening of his forthcoming restaurant, the Gilbert Scott at the new St Pancras Renaissance hotel in London's King's Cross.

The two-Michelin-starred chef was set to open the new restaurant next month but has been forced to push back the opening until May to ensure it "is fully complete".

Named after the architect who designed the 1873 Victorian Gothic building that once housed the Midland Grand hotel, the Gilbert Scott will sit in what was the entrance hall and coffee room of the property. It will be a British brasserie, open seven days a week for breakfast, lunch, dinner and drinks, seating 52 in the bar and 120 in the main restaurant.

The restaurant will be overseen by general manager Chantelle Nicholson, who joins from Wareing's eponymous operation at the Berkeley Hotel where she was sous chef.

The kitchen will be headed up by Oliver Wilson, with typical dishes including Lancashire hot pot for two, Harrogate loaf (terrine of veal and Denhay bacon with pickles), Dorset jugged steak, Manchester tart, Bakewell pudding with Cornish soured cream, and Cambridge burnt cream with currant compote, tweed kettle, apple amber.

Designer David Collins has preserved and enhanced the space, giving it a new look featuring marble, gold leaf and hand-painted ceilings.

The 245-bedroom Marriott St Pancras Renaissance hotel London opens on 5 May 2011, exactly 138 years to the day since the Sir George Gilbert Scott-designed Midland Grand opened.
