Chef Martin Blunos, whose former Lettonie restaurant won two Michelin stars, is in advanced talks to open a stand-alone restaurant at the Royal Crescent hotel in Bath.
A spokesman for Blunos confirmed that the chef was in discussions with Von Essen Hotels, which owns the Royal Crescent, to open a fine-dining restaurant there next spring.
Melanie Heath, marketing manager at the Royal Crescent, said the Blunos restaurant will be a stand-alone business and operate quite separately from the hotel's 65-seat Pimpernel restaurant, which is overseen by head chef Steven Blake.
It will be Blunos's third restaurant in Bath. He transferred his two-Michelin-starred Lettonie restaurant to the city in 1997.
After closing Lettonie in September 2001, he opened Blinis in Bath two months later as a joint venture with Chase Hotels. Blinis was put on the market in September 2002 after 10 months of trading.
