Gordon Ramsay to launch informal Borough Market eaterie

Gordon Ramsay is to launch a new casual-dining restaurant near London's Borough Market next year, Caterersearch can reveal.

The new site is to be called Union Street Café and will be headed up by Stuart Gillies, who has overseen the recent relaunch of the Savoy Grill.

Gillies said: "It's a site we signed up a little while ago and is part of a feeling from the whole group that is for team-led, informal restaurants that aren't about the chef."

When Union Street Café launches next year, it will be the third project that Gillies has overseen for Gordon Ramsay Holdings within 12 months.

The cafe will be on two floors in Harling House on the intersection of Union Street and Great Suffolk Street in Southwark.

As well as the relaunch of the Savoy Grill, Gillies is opening Bread Street Kitchen, a 250-seat casual-dining restaurant that is due to launch in London's One New Change in spring 2011.

Bread Street Kitchen will use Plane Food, the Gordon Ramsay Holdings restaurant in Heathrow Terminal 5, as a template. "There'll be the same fast-food mentality and lots of people on their own, so lots of the systems will mirror Plane Food. The back-of-house structure, timings, price level: all of that I will copy from Plane Food but the offering will be completely new," Gillies said.
