Wild Garlic Yarg

First made in the early 1980s, the original Cornish Yarg - its name comes from makers Alan and Jenny Gray's surname spelt backwards - has now been given a twist with the arrival of Wild Garlic Yarg. While nettle leaves cover the original, for this variety the semi-hard cows' milk cheese is wrapped in wild garlic leaves to give a delicate flavour. The cheese comes in 330g wheels, and is dotted with white, pink and grey moulds. It's a touch creamy with a firm texture, but slightly crumbly when cut.
