Celtic Manor finds new head chef

WELSH hotel the Celtic Manor has found a replacement for its executive chef, who quit the day after Prince Charles sampled an illegal joint of beef-on-the-bone there.

Austrian-born Peter Fuchs, previously development chef at the Fashion Café in Dubai, has taken over as executive chef at the hotel in Newport, Gwent.

Eddie Fitzpatrick, who was executive chef, walked out of his job just two weeks after joining the hotel (Caterer, 11 March, page 6) following the headline-grabbing incident.

No one at the hotel has any idea where he is now working.

Fuchs said: "We're aimingto use local produce as much as possible."

A spokesman for the hotel added: "That will not, of course, include beef on the bone."
