Chanterelle Violette mushrooms from Wild Harvest

Chanterelle Violette mushroomsSometimes known as Pig's Ears, examples of Gomphus clavatus, or Chanterelle Violette mushrooms, are very rare in the UK.

Wild Harvest imports them from the Swiss Alps, where they are fairly common. They resemble girolles and other chanterelles. In taste and texture, however, they differ, displaying a fungus like flavour rather than a fruity one.

The colour of the raw mushroom becomes dark brown on cooking. Wild Harvest suggests simply sautéing them.
