Restaurant details of Mark Fuller’s Sanctum Soho revealed

Mark Fuller has unveiled details of his forthcoming restaurant at the Sanctum Soho hotel in London, which is set to launch later this month.

Located in the basement of the 30-bedroom boutique hotel on Warwick Street, the No. 20 restaurant will comprise a 60-seat dining room and 20-seat bar offering a classic British menu.

Head chef will be Gavin Austin, who joins from Searcy’s St Pancras Grand and previously worked as a consultant overseeing the food at the Hard Day’s Night hotel in Liverpool.

The menu will be focused on seasonality and provenance with dishes including crab and sweet corn chowder with brown crab toast; lemon sole with spinach and nut butter; and treacle tart and clotted cream. The average spend will be £40.

Interiors, created by interior design consultancy Can Do, will feature oak floors, timber veneer tables and Altfield gold-rose wall coverings.

Initially earmarked as the Inner Sanctum restaurant, Fuller told Caterersearch that the name change reflected the simplicity of the restaurant and its menu.

The £10m Sanctum Soho is the second hotel from Concept Venues, Fuller’s company set up with chef Garry Hollihead. In addition to the restaurant, it will feature an underground cinema and private rooftop.

Fuller said his events company, Flying Fish, was also undergoing a rebranding to tie in with the “rock ‘n’ roll theme” of the Sanctum hotel.

“We will relaunch it as Sanctum Events and will be catering for festivals including Download and the various events in London’s Hyde Park this summer,” he said.
