Cheesemaker Alison Grooms makes Gouda-style Penbryn Organic Cheese on a farm in Dyfed. The organic cheese is made with milk from the farm's own herd, together with a vegetarian, non-GM rennet, and then matured for three months. The result is a firm body with a slightly fruity flavour. There's also an older version, matured for 12 months, which is closer to Parmesan in texture and ideal for grating.
