Matthew Stephen has joined Catering Services International (CSI) as area development manager to oversee the expansion of the Cadbury Cocoa House chain. CSI currently has six stores in the UK and plans to double the number by 2005. Stephen was manager of the first Cadbury Cocoa House (originally launched as Café Cadbury).

Alan and Aine Sillett have become joint managers of Longfields hotel in Dublin. They previously held the same roles at the Duke of Normandie hotel in Guernsey.

Norrie Oswald has been appointed general manager of the new £5m Tulip Inn hotel, which opens in Gateshead next month. Oswald was previously general manager of the Thistle hotel, Newcastle upon Tyne.

Fabien Thominet has become chef de rang at London restaurant One-O-One. Before this he worked at the four-star South Lodge hotel in Horsham, West Sussex.

Andy Lee has joined the Montreal hotel and private members' club in Liverpool, which opens next month, as general manager. Lee joined the hotel team from Jean-Christophe Novelli's Auberge du Lac restaurant at Brocket Hall in Welwyn, Hertfordshire, where he was general manager.

Mark Willis has become general manager of the newly opened 500-bedroom Radisson SAS hotel London Stansted airport. He was general manager at the Diplomat Radisson SAS Bahrain hotel.

Glynis Jeffery has left Newspost Publishing Group, where she was commercial director, to become Elegant Hotels Group's UK sales manager.

Irish contractor Campbell Catering has selected Pat Cronin as its finance director. Cronin has moved from the Campbell Bewley Group in England, where he was most recently managing director of Arabica Coffee.

Dominique Stewart has become restaurant manager of City Caf‚ Westminster. He has joined the caf‚, located in the City Inn Westminster hotel, from the Millennium Knightsbridge hotel, London.

Great John Street hotel, which will open in central Manchester later this year, has welcomed David Toulson-Burke as general manager. He has joined from the Midland hotel in Manchester, where he was resident manager.

Move of the week
Edinburgh's Town House Company has promoted Hans Rissmann to head up four of its luxury properties as operations director. He has worked as general manager at both its Channings and Bonham hotels.
