The Greenhouse will reopen at the end of this month under the direction of Antonin Bonnet, executive chef at London private members' club Morton's.
The Mayfair restaurant, which is currently under renovation, split from its head chef, Paul Merrett, at the end of last month. According to a statement from the restaurant, Merrett and the restaurant's parent company, MARC (Marlon Abela Restaurant Corporation), parted company amicably.
Merrett said: "Over the past four years I've helped lay the foundations, and now it's time to look at fresh projects. I'm proud of the kitchen team I assembled at the Greenhouse. The Michelin star the restaurant gained last year is a testimony to the hard work and passion."
Bonnet, who joined the MARC-owned Morton's two years ago after a period working under Michel Bras at his restaurant in Laguiole, France, will oversee the reopening in a consultative capacity.
Despite Merrett's departure, Abela is believed to be determined to make the Greenhouse one of the finest dining experiences in London and sees the restaurant's first star as "just the beginning".
