burgeoning hotel group's restaurants.
Ford and McDonald are creating a 90-cover Japanese and European brasserie and 80-seat bar for the Riverbank Park Plaza hotel, which opens in April next year on London's Albert Embankment.
They are also expected to consult on the hotel group's other new projects, including a Cardiff hotel opening next February.
A chef has yet to be chosen for the London hotel, but Ford and McDonald said they aimed to create a destination restaurant with an average spend of about £30.
The restaurant will be the first project to come out of the pair's new business, Ford-McDonald consultancy.
Ford is also working on three independent projects, including a mid-market restaurant in London, a mid-to-budget level Japanese concept and a food retail and bistro operation.
The four-star Riverbank Park Plaza will have 396 bedrooms and 66 units of five-star serviced apartments.
The £120m development will be the biggest new-build hotel in London for more than 30 years, surpassing the 460-bedroom Westminster City Inn on the opposite bank.
