A former director of a Swansea hotel has been fined £9,000 after health inspectors discovered kitchens in an appalling state.

Altaf Sultan Nanji, 54, former director of the Dolphin hotel, Whitewalls, admitted a series of breaches of hygiene regulations during a hearing before Swansea magistrates.

The court was told that on a visit health inspectors found shelves, ovens, floors and other  work spaces covered in dirt, food remains and grease.

A subsequent inspection found the situation barely improved.

In mitigation it was said that with the sale of the hotel imminent Nanji had not been as “hands on” as he had been previously.

Fining Nanji magistrates chairman Derek Evans said: “How you were not aware of the deplorable condition of the kitchen is unbelievable."

The hotel has now been sold and the new owners have refurbished it.
