Graysons Restaurants, the new contract caterer backed by former Compass chairman Sir Francis Mackay, has won its first deal at the expense of Compass division Restaurant Associates (RA).

The company has signed a three-year contract worth £1m in turnover over the full term to provide staff feeding, vending and hospitality for LGC, a provider of chemical and forensic analysis, DNA testing and consultancy services. Graysons will deliver an all-day service to 500 employees and visitors at the Teddington-based firm's Helix restaurant.

Philip Nash, chairman of Graysons, said: "This is a very special client for Graysons and will always have a unique place in our client portfolio as we develop our business."

As revealed by Caterer last month, Graysons has brought together a team of industry heavyweights to target the business and industry market in and around London.

Nash, the former head of RA, has recruited Ian Summers, previously sales director at Catermasters, as Graysons director with responsibility for sales, and Chris Pearce, who worked under Nash at RA, as a director looking after operations.

Nick Thomas, who was commercial director at Compass, is also part of the new outfit as commercial director, but Trevor Briggs, most recently interim chief executive at Compass, is not part of the team as speculation had suggested. The company has also appointed West Kent College chef-lecturer Simon Silvester as executive chef.

Andrew French from LGC said: “We were impressed with Graysons commitment to fresh food, local produce and great ingredients with sustainable sources.”

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
