We've recruited for various hotel guides in the past and the qualifications usually sought are a very good knowledge of food and wine (terminology as well as taste), good communication skills - both oral and the written word - ability to travel freely, driving licence, stamina - there are usually deadlines attached to this work - and in some cases, more meals to be eaten or tested in a day than one would like!
