South London restaurant Chapter Two has seen business soar since relaunching as the more informal Chapters last year.

The former fine-dining restaurant in Blackheath, South-east London, which is the sister restaurant to Chapter One in Kent and first opened in 1998, closed for a two-month refurbishment last year and reopened as the more relaxed Chapters in December.

It is now spread over two floors and includes a bar area as well as an al fresco terrace in addition to the main dining room.

Head chef Trevor Tobin has devised a simpler menu, based around an imported josper oven, with steaks and burgers as a speciality. Other new additions include a breakfast as well as an all-day brasserie menu.

Chapters operations director Penny Jackson told Caterersearch the relaunch had been a “fantastic success”.

“Business is up 25% since the reopening and it really shows that a more populist menu is what people want,” she said.

“Our motivation to relaunch Chapter Two wasn’t so much to do with the economic climate but rather with the fact that we felt after 10 years the restaurant needed to be overhauled to appeal to a wider audience.”

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
