Many restaurants in Chicago are still flouting a city-wide ban on serving foie gras, five months after its introduction.

A report in the Boston Globe found some restaurateurs continue to serve the delicacy, keeping it listed on menus and in one case even framing the city’s warning letter.

Although officials have sent out a handful of warning letters and conducted one inspection, they are yet to levy a fine.

Chicago Health Department spokesman Tim Hadac told the newspaper: “We need to focus as much as possible on things that actually make people sick and kill people. Our mission it to protect human health and not the health of geese and ducks.”

The spokesman added that the ban was the department’s lowest propriety.

In November animal rights campaigners attacked wine producer Tio Pepe’s endorsement of foie gras as part of their sponsorship of Gordon Ramsay’s F Word programme on Channel 4.
