Multi-Cooker from Valentine Equipment

A simple modification to the Valentine Multi-Cooker, which is a fryer-derived water boiler for pasta and noodle cooking, enables individual portions to be handled. The change consists of a bespoke gastronorm 1/1 size plate which fits snugly without steam escaping. Its six slots take Japanese-style individual noodle baskets.

The development is being being demonstrated at Hotelympia along with fryers suited to another Japanese culinary trend. Valentine's Tempura fryers deal with deep-fried fish, shrimps, vegetables and other foods in light, fluffy tempura batter, applying tighter temperature control and improved oil viscosity control to avoid gluten build-ups.
