Former Quo Vadis head chef Jean-Philippe Patruno joins Quaglino's
D&D London's Quaglino's has appointed Jean-Philippe Patruno as executive head chef.
Frenchman Patruno joins the restaurant in St James from Sam and Eddie Hart's Quo Vadis, where he was head chef for more than three years and was recently replaced by Jeremy Lee. Prior to this, he helped the restaurateurs launch Spanish restaurant Fino.
Before working with the Hart brothers, Patruno spent several years working alongside Nico Ladenis, first at the three-Michelin-starred Chez Nico on Park Lane, before going on to head up Nico Central and Simply Nico.
Commenting on his appointment, Patruno said: "I am hugely excited about working at Quaglino's and look forward to putting my own stamp on the menu, in keeping with the restaurant's reputation for elegance and fun."
Quaglino's general manager, Duncan Colbeck, added: "The whole team is delighted to have Jean-Philippe on board. His experience and talent are exceptional and we are keen to see the subtle changes and influences he will bring to the Quaglino's menu."
First opened in 1929 by Giovanni Quaglino, the restaurant was relaunched by Sir Terence Conran in 1993. The art deco-inspired dining room features a central staircase and eight decorated columns, as well as a mezzanine bar and two private dining rooms.
