Better brined shellfish from Lyons Seafoods

Warminster-based chilled and frozen shellfish and seafood supplier Lyons Seafoods is looking to raise the quality of brined shellfish on the market with two new products - Extra Large Hand Peeled Coldwater Prawns and Extra Large Crayfish Tails - marking a move into a new market.

"The brined shellfish market in the UK is currently driven by a low-price/low-quality spiral," explains Lyons food service director Paul Murray. "This is at odds with what is happening in chilled and frozen shellfish and does not reflect what consumers want."

The prawns are said to have a superior flavour and texture to machine-peeled products, and the brine contains no saccharin, so the taste is fresher.

The brined, drain-and-serve shellfish, which have a 60-day shelf life, are sold in the four pack sizes of 120g, 500g, 900g and 1,500g.
