Chilly blast chiller and freezer

Blast freezing is an efficient way of preserving the taste, colour and nutritional value of cooked or fresh food, because it reduces the growth of the ice crystals that form in normal freezers and break the intercellular membranes in foods, which leads to the loss of liquids and vitamins.

Valera's range of combined blast chillers/freezers will cool the specified quantity of food from 90°C to 3°C in just 90 minutes or freeze the same amount from 90°C to -18°C in 240 minutes.

The countertop range includes the Chilly unit, which has 3 x 2/3 gastronorm shelves and can chill up to 8kg per 90-minute cycle or freeze up to 5kg in 240 minutes.

The freestanding range offers chilling capacities between 18kg and 46kg and can freeze between 12kg and 36kg of food.  Made from stainless steel, the freestanders accept 1/1 gastronorm shelves and pans and feature removable shelf supports.

All units will switch automatically to storage mode at the end of the chilling or freezing cycle, and all come with a core probe as standard, except for the Chilly.
