Vietnamese restaurant group Pho is to expand outside of London, with the opening of a site in Brighton this spring.

Owned by Stephen and Juliette Wall, Pho currently runs three outlets in the capital, in Clerkenwell, Fitzrovia and at Westfield shopping centre, and will launch the Brighton restaurant in May.

Spread over 4,500sq ft the 130-seat restaurant will include a bar overlooking an open kitchen as well as table and booth seating in the main dining room and an outside terrace.

Interiors will be developed by acclaimed restaurant designer Martin Brudnizki, whose other projects have included Soho House Group’s latest venture Dean Street Tonwhouse, the Club at the Ivy and St Pancras Grand.

Stephen Wall said the appointment of Brudnizki followed the decision to take Pho’s design to the next level.

“The choice of the designer was fundamental to create the atmosphere that would appeal to the Brighton population and maintain the unique atmosphere we offer at Pho,” he said.
 
Brudnizki added: “We are designing a beautiful, modern British restaurant with inspiration from the Vietnamese culture and the Pho brand.

“Our designs for the restaurant will emulate the simple, fresh qualities of Vietnamese food and the contemporary atmosphere found in all Pho restaurants.”

Named after a Vietnamese rice-noodle soup, Pho offers a menu of soups, stir-fries and curries alongside Asian salads and smaller dishes such as spring rolls and savoury pancakes. Diners can create their own pho with a choice of stocks and fillings including and vegetarian options.
