International and home-grown stars will be lining up to dazzle delegates at the 2005 Chef Conference next month.
One of Spain's hottest chefs, Andoni Aduriz, is to give delegates a masterclass in the afternoon session at London's Millennium Conference Centre on 18 October. He will also be interviewed by Britain's Heston Blumenthal, who has tipped Aduriz as the next big culinary talent to come out of Spain.
Aduriz, who was profiled in Caterer last November, is the chef-proprietor at the one-Michelin-starred Mugaritz restaurant in the Basque region of northern Spain. His style, which lies between those of his countryman Ferran Adri and Michel Bras, sees him prepare dishes such as yucca cooked in truffle juice and sesame, layered with taro and winter herbs.
Two of London's hottest chefs will also showcase their culinary talents. Jason Atherton, who opened the Gordon Ramsay Group's Maze restaurant to great acclaim in May, and the Greenhouse's Bjorn van der Horst will host food and wine matching masterclasses in tandem with their sommeliers.
