Cook-chill equipment is a growth area for refrigeration companies, as caterers who pre-prepare dishes for reheating, or cook meats to use for sandwiches later, learn to comply with food safety legislation. Essentially, the latest blast chillers from Total Refrigeration can cool food from 70°C to 5°C in 90 minutes, meaning that, with a 30-minute cooling period straight from the oven, food can be refrigerated to the correct temperature within the Government's set two-hour limit. The units can then be used for storage, or the food can be transferred to conventional refrigerators.
